As most of you know, my husband and I are moving to Colorado Springs from Atlanta. We started our trek across the country yesterday. Since we have the dog and cat traveling with us, we decided to split up the trip into 2 1/2 days. Atlanta to Nashville (4 hours); Nashville to Kansas City (8 1/2 hours); and then Kansas City to Colorado Springs (8 1/2 hours).
Yesterday was Atlanta to Nashville, so it wasn’t bad at all. My husband researched the best hotels for us and the pets to stay on Official Pet Hotels. We stayed at the Drury Inn at the airport in Nashville. It was really nice and had a very minimal pet fee!
My husband also found a place for us to eat dinner via Happy Cow. The Wild Cow Restaurant is fully vegan unless you specifically ask for cheese, which then makes it vegetarian. We were over the moon with this place (see what I did there? Cow jumps over the moon? Am I delirious from the car ride?!?! ;))!!
We were craving greens after all the greasy vegan food we had been eating lately, so we started with the pear and pistachio salad. Then we each had a bowl as an entrée – I had the veggie quinoa bowl and Kevin had the buffalo beans and greens bowl. We shared the entrées and both dishes were crazy delicious. We really splurged here because we topped it all off with the grasshopper dessert. Pure heaven! If I lived in Nashville, I’m sure I’d be here at least once a week.
