“One of the pleasures in life is enjoying good food.”
Since I’ve become vegan, I’ve heard this phrase more often than not from omnivores when explaining why they couldn’t eat a vegetarian diet. Sometimes I wonder if people think vegans only eat twigs and berries, with a shot of wheatgrass to wash it all down. If you follow my blog regularly, or any vegan blog, you know this is definitely not the case. Vegans eat everything that omnivores eat sans animals and animal by-products. This includes all the American favorites: burgers, burritos, stir-fry, lasagna, and the list goes on and on.
I saw an article today by Kathy Stevens, founder and director of Catskill Animal Sanctuary, that made me believe that this misconception of vegans eating non-enjoyable food is changing. Kathy suggests that America will be vegan by 2050. In the article, she outlines why she’s pretty certain that this will happen with one point being that “meat consumption is down, while ‘all things vegan’ are on the rise.” Kathy states that,
This makes me hopeful that Kathy is right.
