I had a post all lined up for the first Meatless Monday of 2014, but then decided against it because…well, let’s just say it’s not the healthiest meal. After thinking about it for a little while, I realized that I should start 2014 on the right foot by sharing nutritarian-type foods that my husband and I cook and eat all the time. I’d like to eventually get away from sharing the recipes that we make on rare occasions, and instead show how easy our go-to healthy meals have become. It’s also a goal of mine to go back to old recipes and update them to reflect how we make them now.
When I saw JL Fields’ Meatless Monday post on kale today, I got really excited. I can’t wait to go home and try some of these amazing, nutritious dishes! Kale is awesome and so is JL, so definitely peruse her recipes that include her favorite food (which also happens to be one of the most nutritious foods out there).
Over the winter break, my husband and I tried out Dr. Fuhrman’s Quinoa Breakfast Pudding, which – surprise, surprise – has kale in it! Since it’s only in his Eat to Live cookbook and not online, I unfortunately can’t share it with you. But, oh my goodness, yum! Definitely check out some of his other recipes that are online or buy the cookbook like I did for my husband – it’s worth it (and, no, I’m not getting paid to say that!).
I’ve been making slight changes to my recipe that includes – you guessed it – kale, but I’m not ready to post the different variations on the blog yet. It’s definitely one of my favorite kale recipes, though, and it’s super easy to make. So, that leads me to a question for you all: what’s your favorite kale recipe?
