Meatless Monday New Smoothie Recipe

You may have noticed that there have been some changes on my blog recently. I’ve been wanting to revamp things for awhile now because I don’t associate with being a “vegan wannabe” anymore. When I started this blog, it was a good title because I was still on the fence on whether or not I would be completely vegan. Boy, did things change quickly!

After immersing myself in literature and documentaries, I became more aware of why living a compassionate lifestyle is the way to go. I became involved in animal rights organizations and I started fighting to end animal exploitation. Despite contrary belief, dairy farms are some of the worst abusers of animals, so I made a decision pretty early on that I’m going to be running on vegan the rest of my life.

For those of you that have been following me, you also know that I’m a runner. So, I’ll be incorporating this topic into my blog a little more than it has been in the past. Starting with this post.

Running on a vegan diet has helped me run my best in a long time, and I recover much quicker after a run now. I’m currently training for a 10K since I’m still recovering from an injury that put me out of commission for months last year and the beginning of this year. I’m feeling great though, which is most likely due to massage therapy and my healthy lifestyle. I’d like to start training for a half-marathon again, which will probably be one of my goals for 2014.

Going with the Meatless Monday theme, I decided to share my new smoothie recipe that I made before my run this past weekend. Before my long runs, I used to eat an English muffin with either avocado, peanut butter or Tofutti cream cheese on it. Now, I make smoothies beforehand, which give me more nutrients and much more power during my run. What do you eat before a long run?

Avocado Power Smoothie

Serves 2

Ingredients
  • 2 bananas
  • 1/2 tsp cinnamon
  • 1 Tbsp PB2
  • 1/2 avocado
  • 2- inch piece of a cucumber
  • 2 cups shredded kale
  • 1 cup tropical frozen fruit mix
  • 1 cup frozen cauliflower
  • 1 cup unsweetened soy milk (or almond milk)
Steps
  1. Blend ingredients until smooth.
  2. Place glasses in freezer for a couple of minutes to make it frosty.
