Everyone is always curious as to how my husband and I prepare our salads, so I thought I’d start sharing these recipes. People also often wonder how we eat salads every day without getting tired of it, but as I share more of these recipes, you’ll see that we keep the salads varied so we don’t get sick of them. I’d also like to note that I never get hungry after a salad like this because of all the nutrients packed into the dish. This recipe serves 2 and can be made for lunch or dinner.

Ingredients
  • 6 cups baby spinach
  • 1 1/2 cups cantaloupe, diced
  • 1 kiwi, peeled and diced
  • 1 orange, peeled and diced
  • 1 tomato, diced
  • 1 cup uncooked quinoa
  • 1 (15 oz.) can low-sodium black beans, rinsed and drained
  • 2 Tbsp golden raisins
  • 4 dried apricots, diced
  • 2 Tbsp flaxseed meal
  • 3 Tbsp raw almonds
  • 1 Tbsp nutritional yeast
Steps
  1. Cook quinoa by following instructions on the package.
  2. Meanwhile, start preparing the salad by mixing all the ingredients together. Top with cooked quinoa when finished.
